Where It All Started
Hatch was born from the comfort flavors and warm hospitality that Jamie and Stephen Wilson fell in love with during their time living in New Mexico. The smoky chiles, the sunlit kitchens, the easy pace of a meal shared with friends — it all became a part of them.
When they returned to Monterey County, they missed that fire-roasted flavor and openhearted spirit. Hatch is their way of bringing a little bit of that Southwest soul home — a love letter to their favorite food and the feeling it gives.

Raised in Monterey, Kristin has spent her career mastering the art of catering and hospitality. A certified Level 2 Sommelier, she brings flavor pairing, precision, and warmth to every service. Now co-owner of two restaurants, she helps define what local dining can be.
Stephen Wilson
Owner • Wine Specialist
With years of experience in wine sales and a deep understanding of Monterey’s palate, Stephen curates Hatch’s drink program with intention. His focus: what people actually love to drink — balanced, local, and memorable. He now co-owns two restaurants in the area.
Jamie Wilson
Owner • Hospitality Leader
Jamie’s passion is hospitality — not just service, but teaching it. With a background in restaurant operations and a drive to elevate every guest interaction, Jamie ensures Hatch stays true to its mission: bright flavors, kind people, and genuine warmth.
