Our Story

Where Hatch started

Hatch was born from the comfort flavors and warm hospitality that Jamie and Stephen Wilson fell in love with during their time living in New Mexico. The smoky chiles, sunlit kitchens, fire-roasted flavor, and easy pace of a meal shared with friends all became part of what Hatch is today.

When they returned to Monterey County, they missed that unmistakable Southwest feeling. Hatch brings that spirit to Carmel with Hatch chile dishes, tacos, enchiladas, burgers, seafood, brunch, handcrafted cocktails, and a dining room built around color, warmth, and genuine hospitality.

Raised in Monterey, Kristin brings years of catering, service, and hospitality experience to Hatch. As a Level 2 Sommelier, she helps shape a drink and dining experience that feels thoughtful, polished, and local.

Stephen Wilson

Owner • Wine Specialist

Stephen brings wine knowledge, restaurant experience, and a clear sense of what Monterey County guests enjoy. His focus is simple: balanced drinks, approachable hospitality, and memorable nights out.

Jamie Wilson

Owner • Hospitality Leader

Jamie’s passion is hospitality — not just service, but teaching it. Jamie helps keep Hatch focused on bright flavors, kind people, clean execution, and guests who feel taken care of from start to finish.
